The facility failed to properly label and date food items in nourishment refrigerators, leading to the presence of unlabeled and undated food items. Observations revealed various food items, such as green beans, burritos, and sandwiches, were not labeled with the resident's name, food item, or use-by date. Interviews with staff, including the DON, CNAs, RNs, LPNs, and the CDM, indicated a lack of adherence to the facility's policy on food labeling, despite acknowledging its importance for resident safety.
Failure to Label and Date Food Items in Nourishment Refrigerators
Penalty
Summary
The facility failed to ensure that resident foods in nourishment refrigerators were stored according to policy and accepted standards. During observations, it was found that food items in three nourishment refrigerators on resident units were not labeled with the resident's name, the name of the food item, and the date/time or use-by date. This included various unlabeled and undated food items such as green beans, burritos, sausage biscuits, milk, and sandwiches, among others. The Director of Nursing (DON) discarded these items upon discovery. Interviews with staff, including the DON, Certified Nursing Assistants (CNAs), Registered Nurses (RNs), Licensed Practical Nurses (LPNs), and the Certified Dietary Manager (CDM), revealed a lack of adherence to the facility's policy regarding the labeling and dating of food items. Staff members acknowledged the importance of labeling to prevent residents from consuming spoiled or incorrect food items. However, there was inconsistency in the implementation of these procedures, as evidenced by the unlabeled items found during the survey. The Administrator was unaware of the issue prior to the survey and stated that the scheduler was responsible for monitoring nourishment refrigerators. The Administrator also mentioned that nurses should ensure refrigerated items are labeled and dated, and that items from the kitchen should be labeled by the dietary manager. The deficiency highlights a breakdown in communication and responsibility among staff members regarding the proper storage and labeling of food items in nourishment refrigerators.
