Summary

The facility failed to ensure that food was served at a safe and appetizing temperature, as required by professional standards for food service safety. Interviews with the Assistant Director of Culinary Services and the Director of Culinary Operations confirmed that cold food temperatures were not being recorded, and the use of ice blankets under cold food items was insufficient. The President of Culinary Operations acknowledged the necessity of performing temperature checks for cold items and stated there was no excuse for the oversight.
